First let me start off by saying happy New Years Eve! Next time I talk to you it will be 2014! So I wish you a super awesome, healthy and happy New Year :)
I’m not a super huge smoothie lover. I like smoothies but I definitely don’t need them in my life or crave them all too often. I prefer smoothies bought at a smoothie shop (where I don’t have to wash the blender). My favorite smoothie so far is my banana almond butter oatmeal smoothie (but that could be because of my recent obsession with almond butter)…This weekend, I got inspired to experiment with smoothies. Specifically, green smoothies. My hope was to find a healthy shake for baby cakes. The result, a new obsession for me.
I know green smoothies and juices are all the rage lately…but I am telling you this smoothie won’t disappoint.
Here is what you will need:
- 1 1/2 cup unsweetened vanilla almond milk
- 1 handful fresh spinach
- 1 handful chopped kale
- 2 frozen bananas
- 2 granny smith apples (chopped and cored)
- juice from 1/2 lemon
- 1 tbsp chia seeds
- 1 tbsp flax seeds
Put everything into blender or food processor and blend until everything is smooth. Then pour into a tall glass and enjoy. (This recipe makes two servings)
I ran out of the house in such a rush this morning, I drank my green smoothie in the car and boy oh boy was it delicious. You can’t taste the kale or spinach at all! Instead it tastes like banana and granny smith apples with a hint of lemon. So refreshing, healthy and delicious. Even baby cakes loved it.
I snacked on a kidz cliff bar and banana before getting a chance to eat lunch. Yesterday was so incredibly busy that I didn’t get to sit down for lunch (at my desk) until nearly 2:00pm. This never happens. My day revolves around my meals but I was so busy 2:00pm was the first chance I had :(
For lunch I had a salad (romaine lettuce, cherry tomatoes, bell peppers, almonds with balsamic glaze) with a vegan Tortilla Soup.
The best part of the workday had to be going into the kitchen for
liquid tar coffee and surprisingly finding Cuban coffee. Some of the girls make it and it usually goes like hot cakes but today I made it in time. If you haven’t had Cuban coffee, you are missing out!
Of course the best part of my day was coming home to baby cakes. I forgot to share a picture yesterday…we “painted” her baby nails with hot pink nail polish. So adorable. I felt kinda guilty since she is so young so I took it off at the end of the night.
Good thing I have this picture because its so cute it kills me!
She got a Mickey Mouse music set for Christmas and she is in love with her flute. This 13 month old somehow knows how to play the flute. Don’t believe me…see for yourself. (It’s my first video post so forgive me if its blurry or all messed up)
I goofed yesterday morning and forgot to get my crockpot going so I had to change my menu last minute and make something “off” my list. I decided to make petite turkey meatloaf’s with grilled (frozen) asparagus.
The asparagus are from Trader Joes and after two minutes in the microwave, tasted JUST like they came off the grill.
Sadly, no dinner is complete without dessert. I was too lazy to bake anything so I snacked on Annie’s SnickerDoodle bunnies. So addicting good.
I hope the workday flies by so I can hurry home to my nugget and for my LAST run of the year!!!
